- 1½ cups- 2 cups Ham, chopped
- 3 cups Rice, cooked
- 2 Tbs Oil
- 1 small White Onion, chopped
- 1 cup frozen Peas and Carrots, thawed
- 2 Tablespoons Soy Sauce
- 3 Eggs, beaten
- 2 Tbsp chopped Green Onions
Instructions
- Heat Oil in large skillet. Add Onion, Ham, Peas, and carrots and fry until tender.
- Slide the mixture to the side, and pour the beaten Eggs onto the other side. Scramble.
- When cooked, stir in with the Ham mixture
- Add the Rice and Soy Sauce.
- Stir until mixture is heated through.
- Top with Green Onions and serve.
