Hello there folks! I am Nora. I love eating and within this past year I have started cooking almost everyday. Constantly eating out in restaurants can get pricey. Especially when you can usually make the same meal, or even better at home. Due to my crazy work schedule, I am not shy about using shortcuts when preparing meals. Santa Fe Chicken
This dinner is super quick with tons of flavor.
Ingredients
Oil
1 lb Chicken, boneless, skinless
1 can Black Beans, drained, rinsed
1 small can Corn, drained
1 cup Salsa
Cheese (Optional)
Rice-Prepare according to package instructions
1. Heat Oil in Skillet.
2. Add Chicken and cook until no longer pink.
3. Stir in Black Beans, Corn, and Salsa.
4. Serve over Rice and top with Cheese
